In this course, we will learn to make pasta shapes by hand (without the use of a pasta roller or machine). We will focus on making classic pasta dough, which traditionally is made with semolina flour, egg, and salt. There are 100's of shapes of pasta that Italians have made by hand. We will explore a few of these here, while also learning valuable cooking skills as we cook some traditional pasta dishes with the pasta we make in class. This will include pasta all'amatriciana, and cacio e pepe. Come have fun and learn with us!
