Course Description

Unlock the secrets of French pastry in this hands-on Pate a Choux class and learn to create elegant cream puffs and eclairs. Perfect for bakers of all skill levels, this workshop will guide you through the techniques behind one of the most versatile and essential doughs in classic patisserie. Choux pastry is unique because it is essentially cooked twice, first on the stove, then baked in the oven. We will create glass ganache topped eclairs, and choux au craquelin (cream puffs with crunchy topping), both filled with a luscious vanilla bean cream.

Students are required to wear closed-toe shoes and bring a hat and apron to class.
