Course Description

In this course, we will discuss the role that both herbs and spices play in cooking. Specifically, we will cook dishes originating from parts of the Mediterranean and Middle East, and India. Together, we will make an herby, spicy condiment called Zhoug from Yemen, a North African egg curry called Shakshuka ,and Pita bread. We will also craft a warm beverage of Masala Chai, which comes from northeastern India. It will be a delicious way to showcase the flavors of herbs and spices from around the world.

Students are required to wear closed-toe shoes and bring a hat and apron to class.
