Course Description

In this course, we will make simple sourdough bread using basics of mixing, stretching and folding, shaping, and baking. You will learn this process hands-on, with a focus on fermentation and key methods. For those of you already making sourdough at home, this could be an opportunity to hone in your skills and ask the Chef questions. While we wait on our dough to ferment and in-between stretch and folds, we will make some French onion soup using fresh sourdough bread croutons on top. Students will go away with a loaf (or two) of sourdough bread, a base recipe, and some starter if they wish. 

Students are required to wear closed-toe shoes and bring a hat and apron to class.
